This 30-hour course will familiarize students with the growing market for healthy menu options. The students will be able to assess recipes based on nutrients, describe the characteristics, functions and food sources of major nutrients and how to maximize nutrient retention in food preparation and storage. This course leads to a National Restaurant Association's Manage First certification.
